I used to as well... until I tried some straight from the garden. Omg.

Also, grape tomatoes are like My First Tomato! Get some.

I used to eat tomatoes like an apple. Cherry tomatoes were awesome! But I had an experience...a very pukey experience. I can't smell them now without getting nauseous.

Started working on sauce for our Thanksgiving beef roast. Browned 12 lbs of veal bones in the oven and started the stocks. Will simmer for 48 hours. Flavor.

I've got a bunch of chicken bones roasting up right now....the basis of great gravy is great stock..

2 days from now it will be two sauces:
- mushroom gravy with pan scrapings
- clear reduced jus for beefs

Pork Belly now 24 hours into the light dry cure.
Will be lightly smoked and then braised tomorrow.
Then chilled over-night before being deep-fried.

Fuck turkey.

The marrow will seep into my stock... In the end the stock will be like thick jelly in the fridgerator (cooled to remove fat layer).

you working from fergus henderson's book? this is indeed ultra classic . perhaps not what you'd invite the inlaws over to eat on thanksgiving, but classic still.

i used his pot roast recipe two nights ago, now eating the leftover roast, sliced thin and frizzled in butter, then dunked in the juice, with mashed potatoes pancakes, pickles, and cheap scotch. the day is done again.

Well shit I was just going to scrape the bones and save the marrow for the final gravy but I'm sure I'll get enough out of twelve pounds of bones that I could eat some of it on toast. Should I put it in a little pan and roast it in the oven for a bit or what?
