Simple Mountain Lion Chili

Lots of ways to cook up a chili, found recipe and modified it a little -

1 pound - ground mountain lion
12 oz Diced green chilies
6 oz Diced tomatoes
1-2 Chopped Jalapeños (sub/ add other chilies as preferred)
salt and pepper
Touch of ground cumin seed
1 diced onion
1 clove garlic, crushed
1-2 cups chicken broth (optional)
cilantro (if you like it)
Tortillas

Directions
Season Meat with spices
Brown meat in skillet with a trace of oil (I think i'd use coconut oil)
Add garlic, onion, chilies, tomatoes, jalapeños, salt, pepper, broth
Simmer till done
add topping as below
Fresh Cilantro on top if you like it. The fat content of the chili is going to be super low, so I'd think some butter in the simmer could be a option or maybe crumble in some crisp bacon at the end or grated cheese if you eat dairy. if you like lots of cheese try Asadero or Manchego. Just a little cheese of top maybe a cojita.
Eat with tortillas and quail eggs for wild game huevos rancheros

I've heardthat there has been an explosion of cougars, with populations expanding out from the west, into the midwest, and further, spreading to reclaim their lost territory all over this continent. You go kittys. Love and Kisses. We've got recipies.

The proliferation of cougars will of course include more meat and less babies.

I don't know about a bag of dicks but how about some Front Range Oysters?

2 mountain lion testicles
1 cup beer (a nut brown would probably do the trick - AleSmith Nut Brown Ale recommended)
1 egg, beaten
½ cups all-purpose flour
2 Tbsp yellow cornmeal
Salt and ground black pepper to taste
Vegetable oil (players choice, cold pressed olive is easy answer. might be interesting to due in a clarified butter or ghee)
1 tablespoon hot pepper sauce (Sriracha!)

*Be sure to ask your butcher for calf testicles, not bull testicles. Calf testicles are the size of a walnut and are much more tender than the larger bull testicles.

** Use enough vegetable oil to fill your frying container halfway to the top (to allow for bubbling up and splattering) and to completely cover mtn lion testicles while frying.


Preparation:

Skin the balls. Slice each testicle into approximately 1/4- to 1/2-inch-thick ovals. Place slices in a large pan with enough beer to cover them; cover and let sit 2 hours.

In a shallow bowl, combine egg, flour, cornmeal, salt, and pepper. Remove testicles from beer; drain and dredge thoroughly in the flour mixture. In a large, deep pot, heat oil to 375 degrees F. Deep fry 3 minutes or until golden brown (will rise to the surface when done). Drain on paper towels.

Serve warm with your favorite hot pepper sauce.
