You're making carnitas in that? When I think of carnitas, I get an image of a cauldron of hot oil with huge cubes of pork meat in it. Lamb sounds good.

Sous Vide Carnitas?!?
Nah...

Fatty flap meet trimmed off of lamb loin, cut into 2" chunks.
Seared in thin film of hot fat (I used lard, you can use canola if needed).
Add quartered medium yellow onion, salt, bay leaf.
Continue to toss in pan.
Add whole peeled garlic cloves.
Cover with water, reduce to simmer, cover pot.
Cook until all water is gone, turning lamb periodically.
Remove meat from fat and chill.
Strain fat and reserve.
To finish, heat fat in pan and add meat. Cook until crisp. Add salt and pepper to taste.

Suggest serving with warm pita, fried onions, fresh lemon, a little hot sauce and a nice IPA.
