i got a friend up in Olancha. he lives on Budweiser's 10,000 acre ranch up there. cattle. horses.. a ranch, you dig?








every once in a while, they slaughter a bull and get the goods. this was one of those times.





never-frozen range fed beef is fucking out of site, man. these are happy cows, they live an easy life and that is reflected in their flavor.

yeah, ribs are fucking tite. best tasting meat off a cow.

Now, beef ribs are not easy to do right..and when they are...damn..



Pig ribs..they're a no brainer..all that fat.

Slow. simple. Smoke and an indirect fire.
