Got one of those Smokinators on the way. I will start with some beer can chickens, then test out a rack of beef ribs. Keep ya posted.

Avid cooks are either pots and pans people or knife people. I'm a knife person. One rack for carbons, one rack for stainless. All have their roles.

Three? That wouldn't be much fun now would it? The Wusthofs on the bottom are on the way out, though I will keep the chef for hacking at stuff and the heavy bone cleaver for hacking at heavier stuff. I'm in love with carbon steel. The chinese cleaver at the top is an amazing slicer for veggie prep (especially at $33 bucks, ask me where). The gyuto under it is a super thin super sharp japanese knife. It is so fucking sharp. Like shave the hair off your arm with one swipe sharp. It's pretty wild to use. It will slice a tomato 3 cells thin using zero pressure just the weight of the knife in ONE PASS. I'm a little scared of it. The old frenchie carbons get used a lot, and the two japanese knives at the bottom of the top rack are new and I'm taking to them. I NEVER use the wusthof slicer at the bottom. I rarely use the Santoku at the bottom. It's kind of silly.

I could whittle it down to five. The two chefs, the chinese cleaver, the japanese parer, and the bread knife. That would get the job done with one rack. But you can also use the wusthof cleaver to chop kindling and lobsters and pork bones... Dunno. 6?

I use a three knife set and an additional bread knife. I find that if I keep the paring knife sharp, this system works pretty well.

I need a bigger kitchen.

why does the gyuto have a tanto point?

are you sure that knife is designed for food prep?

my favorite knives are folders.

Tanto point? The gyuto is the second from top. It is a modified chef shape with a santokuish point.

By tanto I think you might be referring to the japanese paring knife at the bottom? It's not really a tanto because only the straight long edge is actually sharp. The edge at the tip is blunt, though eventually I might put an edge on it. Yeah, it's made for food prep. It's basically made for garnish carving. IE carving carrots into roses and the like. I'm just testing it out as a parer.

What model spyderco is that? I've been looking at a dragonfly but this one looks better.

I just use the japanese gyuto for that. Or the frenchie carbon slicer if the fish is smaller. never use the fillet knife you need one?

the knife above is the (i think) limited edition Bob Lum folding knife in titanium.

Bulky? It's got a tiny 2 inch blade and a slim profile. Maybe you are looking at a different model?
